A ristretto is a short, highly concentrated espresso shot. It uses the same amount of finely ground coffee as a standard espresso but extracts only about half the liquid, resulting in a richer, bolder flavor.

  1. Preheat the espresso machine and portafilter.
  2. Grind coffee beans very finely—slightly finer than standard espresso.
  3. Dose 18–20 grams of coffee into a double basket (same as a doppio).
  4. Tamp evenly with firm pressure.
  5. Lock the portafilter into the machine.
  6. Start extraction and stop at 15–20 seconds.
  7. Yield should be 15–20 ml — about half of a normal espresso shot.
  8. Serve immediately.
