Pat halibut fillets dry and season with salt and pepper.
Heat oil in a skillet over medium-high heat until shimmering.
Place fillets in the pan, presentation side down.
Sear 3–4 minutes without moving them, until a golden crust forms.
Flip and reduce heat to medium.
Add butter, garlic (optional), and herbs such as thyme or parsley.
Spoon melted butter over the fish as it finishes cooking (2–3 minutes).
Remove from heat and squeeze fresh lemon juice on top.
Serve immediately.
